Carl Everson was the visionary 4th generation farmer at Opstal Estate. This wine is a tribute to his perseverance and hard work, earthed in our family’s land, during tough times in the industry post-war.
We use old vines from a single vineyard planted in 1982, old French barrels, natural fermentation and minimalistic cellar intervention to proclaim our Slanghoek terroir through this wine. Chenin blanc & Family – the cornerstone of farming at Opstal.

NOTES FROM THE WINEMAKER
The beauty of this wine is even though it stays the same each year (as it’s harvested from the same Single Vineyard and Old Vine Project classified block on the farm), each year is different. The 2021 vintage showed a lot of restraint at first, but then opens up to show quince, peach and pear notes with a freshness and finesse more of a presence on the palate. The distinctive depth and complexity of fruit we’ve learned to appreciate and love of the Carl Everson Chenin, is on show again with the 2021. These precious 39 year old vines, older French oak, spontaneous fermentation and minimalistic cellar intervention in the end proclaim our Slanghoek terroir through this wine.

WINEMAKING
The ripening season was normal and without extremes – a cold and wet winter followed by moderate temperatures through the start of summer. On the 7th of March though we had a massive down-pour of rain which pushed our harvest date a little earlier on this vineyard as I wanted most of the fruit in before that. I believe the somewhat forced earlier pick together with the use of larger oak than before and coupled with only partial completion of malolactic fermentation resulted in a wine that is more balanced. The wine spent a total 10 months in older French oak (big 3000L Foudre, 400 & 500L barrels), before bottling in January 2022. A8% skin fermented component was included in the final blend which adds great texture.
